Hawaii Game Management Advisory Commission Meeting <br /> Minutes—February 22, 2016 <br /> (W NP: ....they have to accommodate you... <br /> MA: ....environment, so... <br /> NP: Oh, well, that's... <br /> MA: Since they put the requirement in place they also put the resource in place <br /> to do the inspection... <br /> NP: So they look at the animal before you kill it and... <br /> MA: There's a pre-slaughter inspection and... <br /> NP: So then people feel confident that the meat is A-OK. <br /> MA: Yeah, and it's kind of interesting, if you look at this model — because it— <br /> this is technically the highest level of inspection that you can possibly have <br /> in meat production... <br /> NP: Yeah. <br /> MA: And the reason is because the guy is standing in this small compartment <br /> watching every last step of the process where if you look at what— how it's <br /> done in a larger facilities — they're doing spot checks — they're watching <br /> (W each processing station and doing... <br /> NP: Yeah, a tall order... <br /> MA: And, yeah, so they leave one processing station and go to the next or this <br /> is the only place where you're gonna see a 100% audit of every step of <br /> the process being done under the eyes of the USDA inspector. <br /> NP: Yeah. And I also wanted to thank you that being humane is really <br /> important, um, because, you know, that, you go to where the animal is and <br /> they don't have the stress of getting loaded on the truck and... <br /> MA: Yeah... <br /> NP: ....and, ah, keep them really calm and then, yeah, that stunt gun, that's so <br /> good —that makes me feel really good about— if I was eating the meat. <br /> MA: Yeah. <br /> NP: Yeah.
