Over here what we have is the <br /> mobile slaughter unit side entrance of the chill compartment-- now it gets <br /> down pretty cold — about what kind of temperature we're looking at? <br /> MA: Oh, that'll take things into the freezing realm very easily... <br /> JE: Yeah. <br /> MA: But the standard for USDA's requirements it has to be chilled from live <br /> carcass temperature down to below 45 degrees within a 24 hours period <br /> and the system in here will achieve that in about a 13 to 14 hour period so <br /> it's sized to ensure that we will never miss that target. <br /> ?: Yeah. <br /> JE: Um, then we have the mobile slaughter unit's side entrance to utility, <br /> water, back, back-up generator, um, you know I had this revised — did you <br /> put in the new one, ah, slide, that I sent you? <br /> ?: [Not speaking in mic] <br /> JE: What's that? Kona... OK. Well anyway, on this, on the slide itself, we also <br /> have hot water, not only cold water, and we also have, um, let's see, <br /> batteries, if in case the generator doesn't work and stuff like that so, it's, <br /> you know, it's pretty well equipped, OK? <br /> MA: This unit is intended to be operated in remote conditions and fully self- <br /> sufficient for two days of processing. So it has all its water, fuel, everything <br /> necessary to accomplish that goal. <br /> JE: OK. We had a blessing — this was over in Kealakekua and in Captain <br /> Cook, um, the dedication was given by Kahu Akaka and, ah, it was really <br /> a spiritual, very, very spiritual event that day, upon dedicating this unit <br /> because it made it quite promising future for a lot of the producers, OK? <br /> And then we had a celebration — a new venture for Hawaii Island Meat <br /> Producers — right here we have David Fuertes and his wife, Carol, and <br /> they put together the pig and the pua'a and just enjoyed —well when the <br /> [unclear] was delicious, OK? And then we had a — during that day—we <br /> also had a membership drive and it, ah, as Mike explained, basically <br /> membership drive was, you know, to get members involved in this and <br /> then, you know, back us up on this venture and you explained a little bit <br /> about it but there was also the stock that they could purchase? <br /> MA: Yup, yup. <br /> 6 <br />
