It's been very rewarding, as the restaurant was <br />dormant for a while, and we've got to know our community, and create this really <br />amazing establishment, providing the community with services, there's not a lot of <br />options down there South, Big Island, so it's been very rewarding. <br />Nishimoto: Do you have Monday, Tuesday, Wednesday, Thursday, Friday specials? <br />Monteleone: We do actually, so we only use Kuhiwi Ranch beef, we only buy fish from <br />our local fisherman there, and Marc and I go hunt and fish and grew up that way, so we <br />breakdown all of our fish there, so we provide a fresh fish plate and a fresh fish burger, <br />and then we also provide standard loco mocos, and we do fun things like spicy chicken <br />sandwiches. Yes, we rotate a lot, we just started introducing local saimin, so we have <br />Chef Sheldon Simeon, Stacie said that some of you guys went over to his restaurant in <br />Kahului at Tiffany's over on Maui, he's a very dear friend of ours, he was on "Top Chef'. <br />So, he came out and helped us kind of roll out a lot of stuff and rearranged our kitchen, <br />and helped with efficiency, so yeah we've been blessed with having a lot of help. <br />Nishimoto: That's nice to hear that collaboration in order to get to this point, very good. <br />And have you received the application report? <br />Monteleone: Yes, ma'am. <br />Nishimoto: And are there any changes to the report? <br />Monteleone: No. <br />MINUTES - LIQUOR COMMISSION MEETING & PUBLIC HEARING - THURSDAY, DECEMBER 5, 2024 - KONA PAGE 11 OF 50 <br />
