Espejo: Is this the old? Singletary: You know Dimple Cheek Cafe? Espejo: So, the menu is going to change somewhat, you're changing the menu? Hitsman: Yes, so currently, we just actually got our full restaurant permits from the Planning Commission last month, but we have been doing hot sandwiches kind of from that, and we're hoping to expand and doing lasagnas, and spaghetti and meatballs and that kind of thing, so yeah different owners, different menu. Espejo: And so the bar area will be where it used to be in the store? Singletary: Yes. Hitsman: Yes, and still it's not you know we're not really marketing it as a bar, more it's just kind of an expanded restaurant space. Singletary: Yes, we don't really want to have a bar up there, we even put like a three - drink maximum on the menu, we don't want to have like a bar. Espejo: It's a nice place up there. Singletary: It's nice and big, it's great, we love it there. Hitsman: It is, it's just kind of out in the middle of nowhere. Gonzalez: So, the applicant shared with me before the hearing, Mark, that your menu you plan to include Italian food? Singletary: Yes. Gonzalez: And that's what you want to do in the space that's in the bar, the bar space that you want to make a dining area, right? Singletary: It's all going to be dining area, yes. Gonzalez: For not only your sandwiches? Singletary: Yes, when we started, we wanted to have Italian food from the beginning, but then we had the problems with the original no licensing for the restaurant turn out, it was hard to serve Italian food in to -go boxes. So, now that we can actually do sit-down dining, we're going to start expanding the menu to full Italian, but we're going to keep our sandwiches.
