EXTRACTION SPEAKEASY BY TUN HAWAI`I <br />BUSINESS PLAN <br />166 Kilauea Avenue, Hilo, Hawai `i 96720 <br />EXECUTIVE SUMMARY <br />TUN HAWAVI is an owner -operated business introducing a dual -concept space in downtown Hilo that <br />combines a curated retail storefront with a seated cocktail lounge known as Extraction Speakeasy. The <br />business Will be intentionally designed to operate as a lov,-capacity, controlled hospitality environment <br />that prioritizes quality service, responsible alcohol consumption, and structured guest flow. <br />Extraction Speakeasy- will operate as a reservation -based cocktail lounge With a maximum capacity- of 21 <br />guests. The experience will be centered on seated service, defined 90-minute service windows, and <br />controlled entry through the retail space. This model will allow for consistent oversight, minimize <br />operational risks commonly associated with traditional bar environments, and provide a predictable and <br />safe experience for guests. <br />A two -drink minimum will be in place for all guests, which may be fulfilled through alcoholic or <br />non-alcoholic beverages. This will ensure inclusivity for guests who choose not to consume alcohol NN hile <br />maintaining consistency in service expectations. <br />Reservations will be secured with a credit card, and a cancellation fee will apply for cancellations made <br />within 72 hours of the reservation time. <br />The retail storefront will serve both as an independent revenue stream and as the primary point of entry <br />for the lounge. During evening operations, it will function as a controlled reception area Where guests will <br />be received, reservations will be confirmed, and identification will be verified prior to entn'. The retail <br />component will not sell or serve alcohol and will operate separately from the licensed lounge area. <br />The business Will anticipate serving an average of 45 guests per night across multiple seating cycles, with <br />an average spend of $50—$65 per guest.
