AN ORDINANCE REGULATING POI SHOP.

Section 1. PERMITS REQUIRED FOR ~)I SHOPS. No poi..
shoe or shop for the manufacture of poi or naiai for sale
shall be erected, maintained, used or operated within the
County of Hawaii except under a permit therefor as herein-
after provided.
The treasurer of the County of fiawaii is hereby
authorized, empowered and directed to issue, upon the
receipt of a fee of one dollar, a Hermit for such. shop,
upon the recommendation, in writing, of the Board of
Supervisors of the County of Hao~aii.
No such permit shall be recommended by the Board of
Supervisors unlPSS such shop shall be properly ventilated,
laid with cement side wslls to a height of a± least three
feet and drainincs to a trap connected with a cesspool,
sewer or such other means for the proper disposal of
drainage as may be -srpr~~ved by the build_ncs and plumbing
insz?ector; nor for amr such shoe in anv place where there
is not availahle an adequate supn]y of pure water or which
is incapable of proper drainage, or which is in such close
proximity to Bleeping compartments, stable, laundry, ar~attoir
or other place where anv business or process is carried on
or condition maintained which, in the opinion of the Board
of Supervisors, might be a source of contamination or infec-
tion to ±11e not or paia~i manufactured thereat. AIo such shop
shalt he maintained, used or operated for any other purpose
than the manufacture of poi or paiai, nor unless only pure

water shall. he used thereat and proper drainage maintained
therefor, nor unless it shall be kept so screened as to
prevent flies and insects from entering therein, nor unless
all implements, tools, machinery, containers and all other
utensils used for or in connec-tion with the manufacture,
distribution or st~race of poi. or pai.ai, shall be sterilized
each time before being used, nor if any person or individual
is employed or engaged in or about such shoe or building
who i.s afflicted with any contagious or infectious disease
or anv disease vrhich in the opinion of the Board of Super-
visors, may contaminate or infect the poi or paiai.
Section 2. TERM OF I'OI SHCP PERMIT. Each permit so
issued shall he for a term of one year and shall be subject
to revocation at anv time by the treasurer on the recommen-
dation of the Board of Supervisors when it appears that the
place for which it is issued or the manner in which such
place is maintained, used or operated does not comply yin all
respects with the conditions and restrictions of Section 1.
Section 3. .Any person now operating in the County of
Hawaii poi shop or shoe for the manufacture of poi or naiai
for sale shall obtain the permit as provided herein within
ninety days after the enactment of said ~~rdinance.
Section 4. REQUIRED ANALYSIS FOR PO7. Poi, which on
analysis is found to contain less than thirty per cent of
total solids, shall be deemed unfit for human food, and it
is hereby provided that the sale of such poi shall be
prohibited.
Section S. PEAIALTY. Any person who violates or fails
to comply with any provision of the sections herein provided,
shall he au ill-y of a misdemeanor and upon conviction thereof
shall be punished by a fine of not less than Twenty-five
Dollars, not more than Five Hundred Dollars. Further,
if such person has a Hermit, the same shall be forfeited.
