Good morning. Could you please identify yourself and your <br />relationship to the business? <br />Fujibayashi: Yes, good morning. My name is Tetsuya Fujibayashi. We will open a <br />restaurant in Waimea. The restaurant name is Moa Kitchen. Moa means chicken in <br />Hawaiian (language). I'm a farmer, actually, but I'm making chicken now; organic <br />live chickens. I'll try to give healthy food to the local people and travelers, too. We will <br />open in the early morning for the businessman to get a bento lunch, maybe 0:00, and we <br />will serve all food in the morning and lunch times. We don't think (we will serve) so much <br />at night, just one reservation (customer) at one time at maybe 7:00 (P.M.), 0:00 (A.M.) to <br />8:30 (P.M.), and we would like to close at 9:00 (P.M.) because we would like to open in the <br />early morning. We will focus on morning and lunch and serve good chicken and good <br />eggs, and good local organic vegetables. Thinking about the menu, the bigger organic <br />people are healthy and energetic. It's all healthy food. We would like to sell healthy <br />alcohol, too. One hundred percent water and hundred percent rice like sake; hundred <br />percent water and hundred percent grape is wine; we don't like chemical use. We'd like to <br />sell water, (for the) future, for the kids. <br />Nahale-a: Thank you, Mr. Fujibayashi. Are you the owner? <br />Fujibayashi: Oh, yes, I'm planning. I'm the Director and the owner is an investor from <br />Japan. He has sixteen shops in Japan, only yakitori; you know the kaba (kabayaki) style <br />with the charcoal? It's like small stuff. We'd like to make it a little bigger. Focus is for the <br />local people first, for their health, I'd like to serve healthy food. <br />Nahale-a: Thank you. <br />Fujibayashi: At night there's not that many people (out) in Waimea, so only a customer <br />from the Kona side or tourist maybe that has a reservation.
