We stopped into the Planning Department today for some help with our dream project <br />and the folks suggested vvetalk toyou two for assistance. Keith was anaward winning executive chef inAsia some time <br />ago and has always had the dream ofcreating fine handcrafted spirits. VVehave been following the farm [oflask <br />movement for some time and dream of creating a micro craft distillery on our farm to use our farm products in making <br />small batch spirits. With Keith's honed palate and the bounty of our land we think we can make something that our <br />island can beproud of. <br />Over the past 4 years we have contributed over 35,000 lbs. of 'ulu to the co-op and plan to continue doing so even with <br />our distillery. VVeare only planning an extremely small production and it will not interfere with our growing for the co- <br />op. <br />We are currently i,n process with the TTB and have started working with Stacie at the Liquor commission. VVehave the <br />funding needed to begin our distillery and the support of family and friends. Our business will bewholesale xo <br />distributors only. No customers or tasting on the premises. <br />Originally,- <br />ht we could process our 'ulu and bananas to spirits under the agriculture rules for the county but it <br />seems we might need something else.
